I agree with the west Philly statement. I loved Jim's Steaks, and I want a Pat's and a Geno's before I die.

Why would you want a cheese steak that is unpleasantly moist?

Geno's in the mob part of South Philly.

They are a bunch of Italian dudes, excellent sandwiches. They got in trouble a few years back for having a sign that said : "This is AMERICA: WHEN ORDERING 'PLEASE SPEAK ENGLISH."'

When you go to order, you should know what you want. I went and the broad in front of me sat there looking over the menu and the guy behind the counter was getting agitated. She said " I want a cheesesteak sandwich" and he was like "no shit? you want a cheesesteak, at Geno's Cheesesteak?"

Evidently its like the Soup Nazi thing on Seinfeld. You order quickly and pay and leave. Kapeesh?

Geno's is marginal at best.

it's consistantly ranked ~ halfway through the pack.

http://www.phillymag.com/articles/one_man_50_cheesesteaks/

^that's a pretty good article, where one guy basically hits 50 joints around the city and ranks them.

I'm partial to tony luke's, but this guy says that Cosmi's Deli was the best. I've never been there.

Yeah, it's a cheesesteak. Not a steak sandwich, and definitely not a "steak and cheese" as you southerner's call it. At least if you're ordering up North.

I have yet to find a great cheesesteak in Raleigh. Zero's subs used to be pretty good. And Andy's isn't too bad, but definitely not a traditional cheesesteak.

sounds like his only complaint to Tony Luke's was not enough cheese. as he states, add another slice or two of cheese and you have south philly cheesesteak heaven. DO WANT!

http://www.davidpatrone.com/Literature/Cheesesteak.htm
^Proper manufacture and classification of a cheesesteak, part I

Quote :
"In Philly there are only three or four things you can EXPECT to find in, surrounding or on a Cheesesteak and that is:
Hoagie Roll: Amoroso's is the most famous local bakery and is utilized by a few discerning Cheesteak vendors across the country. Despite the typical Philadelphian's attitude towards the roll, there are a few suitable replacements worldwide; however, they are extremely difficult to find.
Steak:Thinly sliced meat: NOT Roast beef and not Steak-um (although Steak-um is the only acceptable replacement under extreme circumstances that allows you to continue to call it a Cheesesteak)
Cheese: (Provolone or White American Cheese) some people get Mozzarella, muenster, Jack or even Cheese Whiz but these are generally eschewed by true Philadelphians unless part of a specific adaptation such as The Pizza Steak (See Below)
Fried Onions: they are optional although sometimes automatically added and fried into the meat until soft and semi transparent. I believe the culinary term is "Carmelized"

[quote]The number one mistake in the US when replicating a Philadelphia Cheesesteak is the unsolicited addition of sweet, green/red/yellow, bell peppers, referred to in the remainder of this document as GREEN PEPPERS. This is completely wrong! Do not add green peppers!"

There is this place at Crossroads called Best Steak and Subs that I used to go to all the time for lunch when I used to work at Best Buy in summer 2005. They had some damn nice ones for a good price, I would highly recommed it. It is near Marble Slab, Coconut's, and that Christian bookstore if you are interested. They also give you a discount if you work at one of the shops at Crossroads.

I really like to make my own (my gf loves it when I make them), although I like putting sauteed green peppers and mushrooms on there in addition to the onions. For those of you who do make your own, where do you get your shredded beef? I have been forced into using Steak-Ums due to the lack of an alternative in my area.
