This may be pedantic, but if I'm printing out envelopes to give to my professors, what do I put for the return address?

Leave it blank. They can put the address they prefer.

I would leave it blank. However, if you're really worried about it you can put the main departmental office address. Worrying about postage is not necessary though, the department pays for this willingly.

you may want whoever is writing the letter to mail it, oh and most likely they would have to initial/sign the flap on the back.

or wax seal it with their ring.

Check (which I'm sure you have) to see if there is an option to do them online. I know that at least NC State's grad app lets you do that.
I would provide them with the info, because as someone has pointed out they need to pretty much be the last one's with access to them.

Yeah, I really just needed to know about the return address thing, I've got the rest under control.
