Why in Episode I can they cut through a massive metal blast door, yet in the original trilogy they can't cut through a simple metal hand rail, instead they just produce a shower of sparks.

because jedi's use the force when using the lightsabers. i don't know which scene in the original you are talking about with the hand rails, but they probably weren't TRYING to cut through them.

they didn't 'bounce off' probably went partially into the rail - shower of sparks, reversed course and swung upwards... some of the hand rails might have been structural as well, not the best of ideas to cut out the support to what you're standing on.... short answer - they didn't try to cut through it, just nicked it
