Take her out for a nice dinner something romantic and make sure to do a TON of little things. Build up the date too... just smirk at her and let her know you are working hard on something. Then go do something fun that you both enjoy like go carts, or take her to a secluded water spot and skinni dip. Something that she won't forget.

Combine the Dinner/Gift combo into one REALLY nice dinner - you could probably afford some place really nice if you dropped the gift from the equation. It worked really well with my wife when we were dating.
