can you buy DVD-RW's and just keep recording and wiping out the same DVD with no problems?

Yeah, it works just like a CD-RW.

Continuously burning, erasing, burning reduces the life of your discs though

Yes, I got my mom a dvd recorder for christmas and she uses it with DVD-RWs just like a VCR. Records Oprah every single day on that shit.
