I got a 6800gt which completely sucks ass for multiple monitors compared to every ati card I've ever used. I've tried ultramon, powerstrip, and nview and I can't tweak things like I'd like. Can I just run 2 cards and have one be to accelerate my 2nd monitor (lcd tv) and the other accelerate my main monitor? I was thinking I could pick up an x300 for cheap from someone who bought a dell to upgrade.

Yea, you can. With the new drivers, you can switch in and out of SLI mode without a restart.
